1st Course
Zuppa di Cavolfiore
Pureed cauliflower with a touch of parmesan, pecorino cheese and olive oil.
No cream… you won’t believe us when you taste it.
Pairing: 2016 Falchini “Solatio” Vernaccia di San Gimignano (Tuscany)

2nd course
Truffle Cheese with Roasted Red Pepper Salad and Bruschetta
Sheep’s milk pecorino infused with truffles and served with a roasted red pepper salad (capers,
anchovies, basil, garlic) and bruschetta made with Davide’s freshly baked bread.
Pairing: 2015 Sella & Mosca “Le Arenarie” Sauvignon Blanc (Sardinia)

3rd course
Lobster Fra Diavolo
Lobster tail sautéed in a mildly spiced light tomato sauce served over pasta finished with fresh
clams and parsley.
Pairing: 2016 Anselmi “San Vincenzo” Garganega/Chardonnay/Sauvignon Blanc (Veneto)
& 2016 Valle dell’Acate, Cerasuolo di Vittoria (Sicily)

4th course
Grilled Bison Steak
Bison steak grilled in the brick oven, drizzled with olive oil and served with hydroponic romaine
and fresh lemon.
Pairing: 2014 Colle Massari “Super Tuscan” Montecucco Riserva (Tuscany)

5th course
Warm strawberries with black sambuca and marscarpone
Pairing: NV Velenosi ‘Querciantica’ Visciole (Marches)
